Oatmeal Raisin Cookies
Ingredients:
3/4 cup unsalted butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups quick cooking oats
1 cup raisins
chopped pecans or walnuts (optional)
1. Preheat the oven to 375 F degrees.
2. In a mixing bowl beat butter on medium high speed for 30 seconds. Add both sugars, baking powder, baking soda, salt, cinnamon, and cloves. Beat until combined scraping sides of bowl. Beat in as much of the flour as you can with the mixer, and stir in the remaining flour by hand. Stir in oats. Add raisins and, if desire, nuts.
3. Drop dough by rounded tablespoons about two inches apart on cookie sheet and bake for 8-10 minutes or until edges are lightly browned. Rap the sheet on the counter to knock out air bubbles.
4. Transfer to a wire rack to let cool.
Makes about 20- 24 cookies.
