Succotash with Ham


This version of succotash is my choice for this year's holiday side dish. It only takes a few minutes to prepare, and would reheat easily.

Ingredients:

1 (1 lb) package frozen baby lima beans
2 Tablespoons unsalted butter
6 ounces smoked ham, coarsely chopped (about 1 1/2 cups)
1/3 cup chopped green or red bell pepper
1/3 cup chopped tomato
1/4 cup finely chopped sweet onion
1 (1 lb) package frozen golden corn
2 teaspoons sugar
1/2 teaspoon salt
1/2 freshly ground black pepper
1 cup heavy whipping cream
1 teaspoon dried parsley (or 2 teaspoons minced fresh)

1. Cook lima beans according to microwave package directions. Drain
2. Melt butter in a large skillet over medium-high heat. Add ham; saute 3 minutes or until lightly browned. Add red or green pepper, onion, and tomato and saute until tender, about 3 minutes. Add lima beans, corn, and next three ingredients and cook, stirring often, about 6-7 minutes. Add cream and cook, stirring often, about 10-12 minutes or until all vegetables are tender and the cream is thick and coating the veggies. Stir in the parsley. 

Makes 6-8 servings.
